RAW VEGAN BANANA PANCAKES

Indulge in these delicious and healthy raw vegan banana pancakes. Add your favourite toppings to suit your taste and are perfect for brunch. These pancakes are based on pecans which contain oleic acid, vitamins, minerals, and dietary fiber. Pecans are recognized for neurological protection and are ranked the highest of all nuts in antioxidants, with a delicious rich maple flavour and cashews which are high in minerals including copper, magnesium, thiamine, calcium, and niacin.
1 cup soaked pecans
¾ cup soaked cashews
1 tablespoon sifted oat flour (optional)
½ cup maple syrup or agave
¼ cup water
½ tablespoon vanilla extract
½ teaspoon salt
1. Prepare and soak raw natural Cashews for 2-4 hours, Raw unsalted Pecans for 4-6 hours
2. Rinse, drain and then add to a blender along with syrup, water, salt, vanilla, banana and blend all of the ingredients until smooth, add the oat flour as an option if the batter is too thin.
3. Portion the batter onto a non-stick dehydrator sheet and smooth it out into small pancake shapes.
4. Dehydrate these for between 24-48 hours. Pancakes can be flipped half way be careful that your pancakes do not take on the indentations of the dehydrator sheets, try to keep the surface smooth.
Serve with your choice of toppings, such as fresh berries or banana, peaches, coconut or cashew yogurt, maple syrup or shaved vegan chocolate.
