ZUCCHINI AVOCADO TARTARE

Buttery avocado, light zucchini, and refreshingly juicy lime the perfect summer entree for easy entertaining.

Vegan, Dairy Free, Gluten free, 
INGREDIENTS

2 small zucchini, unpeeled, cut into cubes small
1 teaspoon of lemon juice
1.5 teaspoons olive oil
1/8 teaspoon agave syrup
1 tablespoon chopped basil
1 tablespoon chives, chopped
½ teaspoon salt
1 avocado, small cubes cut

INSTRUCTIONS

1. Toss all ingredients until well combined, divide into 2 servings and press into ring molds.


2. Garnish with fresh chives, ground pepper, Olive oil, chill and serve on decorative plate.

This raw vegan recipe is highly nutritious, light, fresh and simple to create at home. I love using extra lime zest for garnishing, feel free to experiment by adding garlic or some nutritional yeast flakes if you want a cheesy flavour.
